A pasta extruding machine is essential for making proper round spaghetti, authentic oval linguine and rigatoni, but lasagne sheet and flat pasta, from tagliolini to pappardelle, is also made using extruding machines.
The pasta is automatically mixed, kneaded and then extruded through bronze dies. Extrusion through bronze is an ancient process that imparts a rough surface to the pasta, which will hold a sauce better.
